EASY PEASY Slow Cooker Chicken Tortilla Soup

Hello. Hello. Hello. I AM BACK.

I made it through the first nine weeks of school and now I feel like I can breathe a little easier. I’ll give you more of an update on all things first grade next week in our life update. So on Sunday, for the first time in what felt like forever, I had absolutely no plans! I went to work out and left there feeling inspired to make chicken tortilla soup for the first time ever. I hope I’m not the only one who gets a wild hair to go grocery shopping at 9:30 in the morning on a Sunday…

Anyway, I got the recipe from a friend and I am SO glad I asked for it because it’s absolutely delicious. I tweaked it just a little bit though so I’ll let you know what I did vs. what the recipe called for. Since you know how we feel about people writing a novel about a dang recipe, here it is!

Chicken Tortilla Soup

1 lb. chicken breast (I used 1.5 pounds because I love chicken)

2 tsp. chili powder

1-1.5 tsp. sea salt (let’s be real, eyeball this part. Who measures salt in soup?!)

1 tsp. cumin

1/2 tsp. black pepper

1 large red onion (wear glasses and chew gum while you cut it to save your eyeballs)

2 bell peppers diced (I used green)

1 serrano pepper (no seeds. The original recipe calls for 2 jalapenos but I prefer serrano for the heat)

2- 15 oz. cans diced, fire roasted tomatoes, drained

1-15 oz. can sweet corn, drained

1-15 oz. can black beans, drained

1- 15 oz. can garbanzo beans, drained

32 oz low sodium chicken broth

about 4 cups crushed tortilla chips, for serving. Or just eat them right from the bag… Who really measures chips?

optional toppings- Greek yogurt/sour cream, cilantro, cheese

Get out the crockpot, plug that bad boy in and let’s get rolling.

  1. Add the chicken breasts to the bottom

  2. Spices on top!

  3. Dice the onion and peppers, throw it all in.

  4. Add tomatoes, corn, black beans, garbanzo beans and broth in.

  5. Cook for 4 hours on high (8 on low)! Pull out the chicken and shred it with a fork or do it the lazy way like me and use your mixer. I shredded my chicken about halfway through because I didn’t read this part of the instructions. Whoopsies! It didn’t make any difference.

  6. Add some more salt and whatever garnishes your heart desires.

  7. BOOM. Done. Enjoy!
