My Pastry Journey So Far

Most of you probably already know this, but I love to bake! I started baking at a fairly young age, but when I went off to college for marketing, I definitely did not expect to start a pastry job once I graduated. That’s life, I suppose and I loved my time at Flour-ish in Downtown Conroe. While there, I started as one of three pastry girls and worked my way up to head pastry chef where I was the only pastry person pumping out all the baked goods (with some help here and there from my lovely friends and coworkers). Then, I became assistant manager and was still able to do all of the cakes for customers and for the shop. I learned so much while there, and now that I’m gone, I still love to bake whether it’s for myself and family or for customers of Meadowsweet Bakehouse.

I’ve been able to try some new things since I’m on my own now and am still looking forward to experimenting, learning, and expanding my pastry knowledge! With Thanksgiving coming up fast, I feel like I’m a little bit behind on planning and deciding what to make. Callie and I have kind of taken the lead on Thanksgiving the past few years and we have an exceptionally busy November so we really need to get on that because it’s always so much fun and I hope she loves it as much as I do.

Since I don’t have any Thanksgiving plans to share just yet, I thought it could be fun to take a look at my bakes throughout the years. I’ve definitely come a long way and am ready to keep on keeping on and find my style and learn more about flavors and techniques! This is one of the first big cakes I remember doing. It was for Callie’s sixteenth birthday and Mom and I worked on it forever and were so proud of it! It was a two tier red velvet I think with canned frosting, fondant polka dots and fondant flowers. Look at the cracks! I’ve gotten to be way too hard on myself in my old age and would have been stressing the heck out about it nowadays but the truth is, it was delicious and it made a statement and no one really cared what it looked like. The best type of cake, is the kind that gets eaten. Since then, I have to say I’ve made some considerable improvements.

Really, all of this to say I’m excited for Thanksgiving! I just need to get through the next week and then Callie and I can really get to planning and prepping! This is also to say, if you enjoy doing something, just go for it and keep learning and trying new things. Whatever makes you happy.
