It’s getting cold again people! And I have the PERFECT recipe to keep you warm and cozy! I found this recipe on Pinterest but have since lost the pin so I cannot link it back but just so you know this recipe isn’t mine. Brenna loves the Zuppa Toscana Soup from Olive Garden (like she gets that instead of a salad there, crazy person) so when I came across a recipe for it I thought I’d give it a try! And now it’s like my favorite thing ever. Jason and I make it so much! I’ve never had the kind at Olive Garden so I’m not sure how similar it is but Brenna’s had both and said they are both good!

On to the Recipe!

Ingredients

1 lb ground spicy sausage

1 yellow onion (diced)

2 Tbsp flour

4 Russet potatoes

1/2 bunch Kale

8 slices bacon (diced)

2 cloves Garlic

32 oz Chicken Stock

1 cup Heavy Cream

salt, pepper, red pepper flakes

Instructions

  1. Brown sausage. Drain well, remove to plate

  2. Fry bacon (I dice it before cooking but you do it however you like!) then remove to sausage plate. Drain all but about 1 Tbsp of grease

  3. Add onion, cook 5 minutes, add garlic towards the end

  4. Sprinkle flour over the onions and garlic, stir. Pour in chicken stock as you stir. Add in potatoes and bring to a boil.

  5. Gently boil until potatoes are soft (about 15 minutes). Add back in sausage, bacon, heavy cream, and kale. Stir and cook 5-10 minutes until kale is wilted.

  6. Taste and add seasonings if needed.

And that’s it! It’s seriously such an easy recipe and all you need is a cutting board and a pot! I love a recipe that doesn’t require a bunch of kitchen supplies. The real reason I love this recipe so much though is because when it’s just me and Jason this is like all I have to cook for the whole week! I’m not always a fan of reheating food but this is soup and it tastes great after being reheated!
