Easy Chocolate Chip Cookies

Hello and Happy Tuesday! Summer is slowly starting to wrap up for me and I’m sad because that means less pool days but it’s fine because that means school is just around the corner! #alltheschoolsuppliesareout So while I don’t have a room reveal for you just yet (remember I moved grades and now my new classroom is in shambles) I do have a good chocolate chip cookie recipe that I want to share with you! That’s probably even better, right?

I know some of you are probably wondering why I won’t share my oatmeal chocolate chip recipe but let me tell you… That recipe is going with me to my damn grave. Unless I have a daughter, then she’ll get it. It’s just one of those things that I wont share so it is what it is!

You know my feelings about sharing a recipe online and how annoying it is to write an entire novel about how amazing it is and blah blah blah. That’s up for you to decide. So take my recipe, make these delicious cookies and then report back because I want to know!

Chocolate Chip Cookies

1 cup salted butter (I prefer Falfurria’s)

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs, room temperature

1 teaspoon vanilla (I prefer Madagascar Vanilla or Mexican Vanilla)

3.5 cups all purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

2 cups chocolate chips (I always do more than this but you do you!)

Instructions

  1. Preheat your oven to 350. Line a cookie sheet with parchment paper.

  2. In the bowl of an electric mixer fitted with the paddle attachment beat the butter until smooth. Add the sugars and beat until light and fluffy, about 2 minutes. Scrape down the sides of the bowl.

  3. Add the eggs one at time and mix until well incorporated. Scrape down the sides of the bowl. Add the vanilla and mix for about 30 seconds.

  4. With the mixer on low speed, add the flour, baking soda, baking powder. Mix until combined. 

  5. Stir in the chocolate chips.

  6. Scoop 2-inch balls of dough onto the cookie sheet. Bake for 11 minutes. The cookies are done when the edges are slightly golden brown. The top may look a little soft. That's ok! The cookies will continue to bake a little while they cool.

The nice thing about this recipe is that it calls for cold butter! So if you’re in a hurry to make cookies you’re set because you don’t have to wait around for the butter to soften! Sometimes if I’m really in a hurry, I will drop the eggs in a cup of room temp water. I don’t know if that’s really the best thing to do but it works!
