Impressive but Easy: Quiche

I enjoy cooking. Some people don’t, and that’s okay! Sometimes, I don’t feel like cooking, and that’s okay too. However, I do like to fancy things up a bit if company is coming over or even sometimes just for myself and me and Brad or me and the family. When you’re trying to look impressive, but don’t want to do extra work, we got you covered!

This is the fist post in a series in which we share recipes and ideas that look impressive or even a little difficult but are actually quite simple when you get down to it. When you’re looking to impress without all the work, make a quiche! I’ve always been a fan of quiche, but rarely had it up until I realized just how easy it is to make when I have to make it every single morning at work. It really is just mixing everything together and pouring it into a crust. It’s even easier when you use a frozen pie crust - still super flaky and tasty. You can also bake it in a ramekin to make it gluten free. AND, change up the mix ins for whatever you have on hand in the fridge or whatever your mood is for the day. Some other great combinations are ground sausage, caramelized onions, and herbs; German sausage, jalapeño, cheddar; broccoli, potato, gruyere. We used sausage, caramelized onions, spinach, and cheddar. For the most part, I like to have cheese somewhere in there, something green, and a meat, but vegetarian quiches are great also!

To actually make the quiche, preheat the oven to 350 and I like to blind bake the crust for 5-10 minutes which just means baking it without the filling. This helps to avoid a dreaded “soggy bottom” (those that watch The Great British Bakeoff know what I’m talking about). While the crust is baking, prepare the filling.

Crack the eggs into a large bowl and add the salt and pepper and any mix-ins you’re adding. I’ve found that this is easiest to stir with a fork and the mix-ins help break up the eggs while mixing. Then, slowly pour in the heavy whipping cream while stirring continuously. Mix until the whole mixture is a pale yellow color and the mix-ins are evenly distributed.

Then you just pour it into your pie dish and bake the whole thing until a toothpick inserted in the middle comes out clean! It’s good to bake it on a baking sheet with sides to catch any overflow and they do take some time to bake through - about 40-60 minutes. It’s a great stand alone dish, but if you want to zhuzh it up even more (while still keeping it super easy), keep on scrolling for two easy pairing options!

Quiche goes great with a super simple salad. I’m talking arugula, shards or parmesan, and a lemon vinaigrette dressing. That’s it. If you don’t like arugula, use spinach or a spring mix and HEB Marketplace has a great lemon vinaigrette. So does Olive Garden. Just something light so it pairs with the quiche instead of overpowering it.

Another easy option is a fruit salad. Just toss together your favorite berries and add a mint simple syrup for sweetness and fanciness (equal parts sugar and water melted together with sprigs of mint that you take out after infusing, or finely chopped mint that you can leave in the syrup for color). THAT’S IT, Y’ALL. It really is that easy to impress your friends with brunch.
